CHICKEN SALAD

INGREDIENTS

  • 2 skinless chicken breasts

  • 1 large egg, hard Boiled

  • 1 head of romaine lettuce 

  • shaved parmesan

Dressing

  • 1/3 to 1/2 cup low fat mayonnaise

  • 1 teaspoon lemon juice

  • 2 tablespoon olive oil

  • salt and pepper to taste

 

    DIRECTIONS:

    • 1. Place chicken into boil water, skimming fat as needed.

    • 2. Cook about 15 minutes, then drain and shred.

    • 3. In a bowl, combine the chicken, lettuce and egg; Toss to blend.

    • 4. Add the dressing and parmesan.
