EGG COOKING METHOD: BAKED WHIPPED EGG WHITE
Egg white 60g
Vinegar 1/2 teaspoon
Corn starch 1/4 teaspoon
Orange (or any flavour) curd (+- 1/2 tsp for each heart)
Preheat oven at 160 degree Celsius.
Beat egg white till soft peaks/bubbles form;
Gradually add in sugar (1 teaspoon at a time), beat well after each addition. Beat until stiff peaks form, make sure the sugar dissolves completely;
Sprinkle corn starch and vinegar into the meringue and fold with spatula;
Use pastry bag to pipe the meringues onto baking sheet. Stack up 2 or 3 layers of heart shape meringues.
- Bake the meringues for 30min.
Remove the heart shape pavlova from oven and let them cool down. Gently separate the pavlova from baking sheet. Scoop 1/2 teaspoon of orange curd in the hole of those hearts. Garnish with candy sprinkles.
