EGG COOKING METHOD: OMELETTE & HARD BOILED

INGREDIENTS

  • Nutriplus Classic eggs x 5 (1 for hard boiled, 3 for omellete, 1 for chicken roll)

  • Chicken breast fillets x 5 (minced)

  • Carrot (diced, 2 tablespoons)

  • Fresh mushroom (3 pieces, diced)

  • Onions (diced, 2 tablespoons)

  • Corn starch (2 teaspoons)

  • Salt and pepper (to taste)

  • Sausages x 2

  • Nori sheet 

  • Cherry tomatoes (for garnish)

  • Wild rockets (for garnish)

 

THE MAKING:

  • Prepare a hard boiled egg while making the meat roll

EGG MEAT ROLL (this recipe yeild 2 meat rolls)

  • Add diced mushroms, diced carrot and diced onions to chicken mince. Marinate with 1 teaspoon of corn starch, some salt and pepper and egg white;

  • Crack 3 eggs into a bowl and beat to mix well. Add pinch of salt and pepper, 1 teaspoon corn starch and 1 tablespoon water, mix well. Quickly cook with butter in frying pan. Remove from the pan when the omelette is cooked;

  • Trim the omelette into square shape;

  • Lay the omelette over cling film and spread the marinated chicken mince over the omelette (leave at least 1 inch towards the end);

  • Roll the thing up. Tighten, but not too tightly, the roll with sushi roll; 

  • Steam the egg meat rolls for 15 min. or until the meat is cooked. Remove from heat and cut intt slices (thickness: 1 to 1.5cm);

  • Steam the sausages together.

SNAILS

  • The egg meat roll will be the shell of snails.

  • Cut the sausages into halves. For each sausage half, leave 1.5 to 2cm at the rounded end, cut (vertically) half of sausage out;

 

  • Place a slice of egg meat roll on the sausage (the halved side), bend the rounded end up to attach to the meat roll, then pin them with uncooked spaghetti or toothpick;

  • Cut a thin slice at the bottom of sausage to flatten it so that it can stand;

SNAIL EYES

  • Use a medium size straw to cut 4 circles out from hard boiled egg white (each cut yeild 2 eyes);

 

  • Cut circles (smaller than egg white circles) from nori sheet, then stick on each egg white;

 

  • Insert 1 inch length uncooked spaghetti or any dried noodle into each eye, and nail the eyes on the rounded end of each sausage;

SNAIL MOUTH

  • Cut different mouth shapes from nori sheet and stick on sausage. If the surface of sausage is dry, use water or butter or mayonaise as glue.
